A quick and easy creamy pasta dish featuring sun-dried tomatoes and fresh spinach, balanced with a luscious cheese and broth sauce for a comforting yet vibrant dinner.

  • 12 oz (340 g) pasta (fettuccine, penne, or farfalle)
  • 1/2 cup (75 g) sun-dried tomatoes, finely chopped (oil-packed recommended or rehydrated dried)
  • 4 cups (120 g) fresh spinach, loosely packed and roughly chopped
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken or vegetable broth
  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 tablespoon butter
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz pasta and cook according to package instructions until al dente, usually 9–11 minutes. Reserve 1 cup pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  4. Add chopped sun-dried tomatoes to the skillet and cook for 2–3 minutes, stirring occasionally.
  5. Pour in 1/2 cup chicken or vegetable broth and 1 cup heavy cream. Stir gently and bring to a simmer. Let reduce slightly for 3–4 minutes until sauce thickens.
  6. Stir in 1/2 cup freshly grated Parmesan cheese and 1 teaspoon Italian seasoning. Mix until cheese melts and sauce is smooth. Season with salt and pepper to taste.
  7. Add chopped spinach to the sauce and toss gently. Cook for 2 minutes until wilted but still bright green.
  8. Drain pasta and add directly to the skillet with the sauce. Toss together, adding reserved pasta water a little at a time if sauce is too thick.
  9. Remove from heat and let pasta rest for a minute to allow flavors to marry.
  10. Serve immediately with extra Parmesan and a crack of black pepper. Drizzle olive oil on top if desired.

Notes

If sun-dried tomatoes are salty, taste sauce before adding extra salt. Reserve pasta water to adjust sauce consistency. Avoid overcooking spinach to keep it bright and fresh. Use freshly grated Parmesan for best melting and flavor. Simmer sauce gently to prevent cream separation. For dairy-free, substitute cream with coconut cream and Parmesan with nutritional yeast. Gluten-free pasta can be used as a substitute.
