These crispy air fryer broccoli bites are a quick, healthy snack that turns broccoli into a crave-worthy treat with a crunchy coating and tender inside.

  • 3 cups fresh broccoli florets (about 300 grams), washed and cut into bite-sized pieces
  • ½ cup all-purpose flour (60 grams) – can substitute almond or rice flour for gluten-free
  • ¼ cup grated Parmesan cheese (25 grams) – use nutritional yeast for dairy-free
  • 1 large egg, beaten (or 1 flax egg for vegan: 1 tbsp ground flaxseed + 3 tbsp water)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Cooking spray or a light drizzle of olive oil

Instructions

  1. Wash and dry the broccoli florets thoroughly. Pat dry with paper towels and cut into 1 to 1½ inch pieces.
  2. In a medium bowl, whisk together flour, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  3. Beat the egg in a separate bowl. Slowly add the egg to the dry mix, stirring until a thick but smooth batter forms. Add a splash of water if too thick.
  4. Dip each broccoli floret into the batter, coating fully. Shake off excess batter and place on a parchment-lined plate or baking sheet. Let rest for 5 minutes.
  5. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  6. Lightly spray or brush the air fryer basket with cooking spray or olive oil. Arrange broccoli bites in a single layer without overcrowding.
  7. Air fry for 10-12 minutes, shaking or flipping halfway through for even browning.
  8. Check for golden brown and crispy texture. Add 1-2 more minutes if extra crispiness is desired, watching carefully to avoid burning.
  9. Serve immediately, optionally sprinkled with extra Parmesan or sea salt. Pair with ranch or garlic aioli for dipping.

Notes

Do not overcrowd the air fryer basket to avoid steaming instead of crisping. Let the batter rest on the coated broccoli for 5 minutes before cooking to help it stick. Preheat the air fryer for best results. For vegan version, use flax egg and nutritional yeast instead of Parmesan and egg.
