  • 1 cup (90g) panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs, lightly beaten
  • Optional: finely chopped fresh parsley or thyme

Instructions

  1. Wash the zucchinis thoroughly and slice into 1/8-inch thick rounds using a mandoline or sharp knife. Pat slices dry with paper towels to remove excess moisture.
  2. In one bowl, beat two large eggs (about 100g). In another bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  3. Dip each zucchini slice into the beaten eggs, letting excess drip off, then press into the breadcrumb mixture to coat both sides evenly. Place coated slices on a plate or tray.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange zucchini chips in a single layer in the air fryer basket without overlapping. Cook in batches if necessary.
  6. Air fry for 8-10 minutes, flipping halfway through with tongs, until edges are golden brown and crispy. Add extra 1-2 minutes if needed for desired crispness.
  7. Transfer cooked chips onto a wire rack or paper towels to drain any residual oil and keep crisp. Let cool slightly before serving.
