  • 8 to 10 slices thin but sturdy bacon
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly cracked black pepper
  • Pinch of salt
  • Optional: red pepper flakes
  • Optional: fresh lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C) and allow about 10 minutes for it to reach temperature.
  2. Rinse asparagus and pat dry. Trim off woody ends (about 1 to 2 inches).
  3. Cut bacon slices in half crosswise so each piece can wrap about 3 to 4 asparagus spears.
  4. In a mixing bowl, toss asparagus with olive oil, garlic powder, black pepper, and a pinch of salt.
  5. Take 3 to 4 asparagus spears and wrap a half slice of bacon snugly around the middle, overlapping slightly to hold. Place bundles seam-side down on a lined baking sheet.
  6. Bake for 20 to 25 minutes, turning bundles gently with tongs around the 12-minute mark for even crisping. The asparagus should be tender with a slight snap and bacon golden and crisp.
  7. If bacon cooks before asparagus is tender, lower oven temperature to 375°F (190°C) and continue roasting a few more minutes.
  8. Optionally, sprinkle red pepper flakes or squeeze fresh lemon juice over bundles after baking. Let cool for 2 minutes before serving.

Notes

Use thin-cut bacon for easier wrapping and crispier results. Avoid overcrowding the baking sheet to ensure crispy edges. You can prepare bundles up to 2 hours ahead and refrigerate before baking. Reheat leftovers in a 375°F oven for 8 minutes to restore crispiness; avoid microwaving.
