  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 thin to medium bacon slices
  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise and remove seeds and membranes to control heat.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, and black pepper. Stir until smooth.
  4. Fill each jalapeño half generously with the cream cheese mixture using a spoon or small scoop.
  5. Wrap one slice of bacon tightly around each stuffed jalapeño half, starting at the base and spiraling up. Use toothpicks if needed.
  6. Place the wrapped poppers seam-side down on the wire rack to allow even crisping.
  7. Bake for 20-25 minutes until bacon is crispy and filling is bubbling. Check after 20 minutes to avoid burning.
  8. Let poppers cool for a few minutes before serving to allow filling to set.
