  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt or kosher salt, adjust to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon garlic powder (optional)
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse Brussels sprouts under cold water, trim stem ends, and cut each sprout in half lengthwise. Pat dry with paper towels.
  3. Chop bacon into 1-inch pieces. Cook in a large skillet over medium heat until crispy but not burnt, about 6-8 minutes. Remove bacon bits with a slotted spoon and drain on paper towels, reserving the rendered fat.
  4. In a mixing bowl, combine halved Brussels sprouts with bacon fat, olive oil, garlic powder, salt, and pepper. Toss well to coat evenly.
  5. Spread sprouts cut-side down in a single layer on a rimmed baking sheet.
  6. Roast for 20 minutes, flipping sprouts halfway through with tongs to ensure even browning. Rotate pan if needed.
  7. After 20 minutes, sprinkle crispy bacon bits on top and roast for an additional 5 minutes.
  8. Remove from oven and immediately drizzle with balsamic vinegar. Toss gently to coat.
  9. Sprinkle with fresh parsley and red pepper flakes if using.
  10. Let cool for a couple of minutes and serve warm.

Notes

Dry Brussels sprouts thoroughly before roasting to ensure crispiness. Roast at high temperature (425°F) and avoid overcrowding the pan. Add bacon near the end of roasting to keep it crispy but not rubbery. Toss with balsamic vinegar immediately after roasting for a glossy, tangy finish. Broil for last 2 minutes if extra crispiness is desired, watching carefully to avoid burning.
