These Crispy Buffalo Chicken Bombs are a quick and easy game day snack featuring a spicy buffalo chicken filling wrapped in a crispy dough shell, perfect for sharing with friends and family.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • ½ cup buffalo wing sauce (Frank’s RedHot recommended)
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 2 tablespoons ranch dressing or blue cheese dressing (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 package refrigerated pizza dough or crescent roll dough (about 8 oz)
  • 1 tablespoon olive oil or melted butter (for brushing)
  • Extra buffalo sauce (warm for drizzling)
  • Chopped green onions or celery sticks (for garnish and crunch)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, mix the shredded chicken, buffalo sauce, softened cream cheese, shredded cheddar, ranch or blue cheese dressing, garlic powder, salt, and pepper until well combined and creamy.
  3. Lightly flour your surface and roll out the pizza dough into a rectangle about ¼ inch thick. Cut the dough into squares roughly 3×3 inches. If using crescent roll dough, separate the triangles carefully.
  4. Spoon about 1-2 tablespoons of the buffalo chicken filling into the center of each dough square. Fold the dough over the filling and pinch the edges tightly to seal completely. Shape into balls or pockets.
  5. Place the assembled bombs seam side down on the baking sheet. Brush each with olive oil or melted butter. Bake for 15-18 minutes until golden brown. Let cool slightly before serving.

Notes

Use rotisserie chicken for convenience. Soften cream cheese before mixing to avoid lumps. Pinch dough edges firmly to prevent filling leakage. For extra crispiness, broil for 1-2 minutes at the end of baking. Can be air fried at 375°F for 10-12 minutes as an alternative cooking method. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven at 350°F for 8-10 minutes to maintain crispiness.
