  • ½ cup buffalo wing sauce (about 120ml)
  • 1 cup shredded cheddar cheese (about 113g)
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • ¼ cup baking soda (about 60g)
  • 10 cups water (about 2.4 liters)
  • ½ cup blue cheese crumbles (about 75g)
  • ¼ cup mayonnaise (about 60ml)
  • ¼ cup sour cream (about 60ml)
  • 1 tsp fresh lemon juice
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh chives (optional)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (1 ¼ cups), sugar (1 tbsp), and yeast (2 ¼ tsp). Stir gently and let sit for 5-10 minutes until frothy.
  2. Make the dough: Add melted butter (3 tbsp) and salt (2 tsp) to the yeast mixture. Gradually stir in the flour (3 ½ cups), about a cup at a time, until a sticky dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium speed for 5-7 minutes.
  4. Let the dough rise: Place dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 1 hour or until doubled in size.
  5. Prepare the buffalo chicken filling: Combine shredded chicken (2 cups), buffalo wing sauce (½ cup), shredded cheddar (1 cup), minced garlic (1 tsp), salt, and pepper in a bowl. Mix well and set aside.
  6. Preheat oven to 425°F (220°C). In a large pot, bring 10 cups water and ¼ cup baking soda to a boil.
  7. Shape the pretzel bites: Punch down dough and divide into 1-inch pieces. Flatten each piece into a small circle, place about 1 tablespoon of buffalo chicken filling in the center, fold and pinch edges tightly to seal, then roll into a smooth ball.
  8. Boil the bites: Drop pretzel bites into boiling baking soda water, 6-8 at a time. Boil for 30 seconds, remove with slotted spoon, and place on parchment-lined baking sheet.
  9. Bake for 15-17 minutes until golden brown and crispy. Brush with melted butter immediately after baking.
  10. Prepare the blue cheese dipping sauce: Mix blue cheese crumbles (½ cup), mayonnaise (¼ cup), sour cream (¼ cup), lemon juice (1 tsp), black pepper (¼ tsp), and chives (optional) in a small bowl. Chill until serving.
  11. Serve the pretzel bites warm with blue cheese dipping sauce on the side.

Use warm water (not hot) to activate yeast properly. Seal dough edges tightly to prevent filling leakage. Boiling in baking soda water is essential for authentic pretzel crust and chew.
