A quick and easy 5-step dinner combining seasoned ground beef, creamy sour cream, melty cheddar cheese, and a crunchy Doritos topping for a comforting taco casserole.

  • 1 lb ground beef (85% lean preferred)
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 packet taco seasoning (about 2 tablespoons homemade blend)
  • ½ cup salsa (120 ml)
  • ½ cup sour cream (120 ml)
  • 2 cups shredded cheddar cheese (200 g)
  • 1½ cups crushed Nacho Cheese Doritos (150 g)
  • Optional toppings: sliced jalapeños, chopped cilantro, diced tomatoes, sliced black olives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until no longer pink, about 5-7 minutes. Drain excess fat if needed.
  3. Push the beef to one side of the skillet. Add chopped onion and minced garlic to the pan and cook for 3-4 minutes until softened and fragrant.
  4. Sprinkle taco seasoning over the beef mixture and stir well. Pour in salsa and mix. Let simmer for 2-3 minutes to meld flavors and reduce excess moisture.
  5. Remove skillet from heat and stir in sour cream until evenly coated and creamy.
  6. Transfer the beef mixture to an 8×8 inch baking dish and spread evenly. Sprinkle shredded cheddar cheese on top, then cover with crushed Doritos, pressing lightly to stick.
  7. Bake uncovered for 15-20 minutes until cheese is melted, bubbly, and Doritos are golden and crispy.
  8. Let the bake rest for 5 minutes before serving. Garnish with optional toppings if desired.

Notes

If Doritos brown too quickly, tent the dish loosely with foil halfway through baking. Broil for 1-2 minutes at the end for extra crispness but watch closely to avoid burning. Drain fat well after browning beef to prevent greasiness. Crush Doritos just before topping to keep crunch. Sour cream keeps filling creamy and moist. Can prepare beef mixture a day ahead and refrigerate. Leftovers keep well for up to 3 days in an airtight container.
