Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add 2 large eggs and 2 teaspoons vanilla extract to the butter mixture and beat until fully combined.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon freshly grated nutmeg.
  5. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Fold in 1 cup chopped pecans or walnuts.
  6. Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheets about 2 inches apart.
