A quick and easy twist on classic French dip sandwiches, featuring crispy tortillas filled with roast beef, provolone cheese, and caramelized onions, served with a warm au jus dip.

  • 8 oz thinly sliced roast beef (deli-sliced or leftover)
  • 68 slices provolone cheese
  • 1 cup caramelized onions (homemade or store-bought)
  • 2 tbsp butter, melted
  • 2 cups beef broth (low-sodium recommended)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Black pepper to taste

Instructions

  1. Caramelize the onions: Heat 1 tbsp butter in a skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Stir occasionally until golden brown and soft, about 20 minutes. (Can be done ahead of time.)
  2. Prepare the au jus dip: In a saucepan, combine beef broth, Worcestershire sauce, garlic powder, onion powder, and black pepper. Bring to a simmer over medium heat and let it gently bubble for 10 minutes. Taste and adjust seasoning as needed. Keep warm.
  3. Assemble the roll ups: Lay one flour tortilla flat. Brush lightly with melted butter. Layer with 2-3 slices of roast beef, a few caramelized onions, and 1-2 slices of provolone cheese.
  4. Roll them up: Tightly roll the tortilla around the filling, tucking in the edges to prevent filling from spilling out. Repeat with remaining tortillas and fillings.
  5. Cook the roll ups: Heat a clean skillet or griddle over medium heat. Place the roll ups seam side down and cook until golden brown and crispy, about 3-4 minutes per side. Use tongs or spatula to gently flip. Brush with a little more melted butter if desired for extra crisp.
  6. Serve: Transfer to a plate and serve immediately with warm au jus dip on the side for dunking.

Brush tortillas with melted butter before cooking for extra crispiness. Cook on medium-low heat to avoid burning. Roll tortillas tightly but not too tight to prevent filling leakage. Assemble roll ups ahead and refrigerate to save time; bring to room temperature before cooking. For gluten-free, use corn tortillas (more fragile). For dairy-free, use vegan cheese and olive oil instead of butter. Horseradish sauce adds a spicy kick inside the roll ups.
