  • 8 ounces thinly sliced deli-style roast beef
  • 68 slices provolone cheese
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup au jus mix or beef broth
  • Optional: horseradish sauce for dipping or inside roll ups

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, combine softened butter with garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Place one large flour tortilla on a flat surface.
  4. Spread a thin, even layer of the seasoned butter mixture over the entire surface of the tortilla.
  5. Layer about 2 ounces of thinly sliced roast beef evenly over half of the tortilla, leaving a small border around the edge.
  6. Place 2-3 slices of provolone cheese on top of the beef. Add horseradish sauce if desired.
  7. Roll the tortilla tightly from the filled edge toward the opposite side, like a burrito, ensuring it is snug.
  8. Arrange the roll ups seam-side down on the prepared baking sheet.
  9. Lightly brush the tops of the roll ups with any remaining butter mixture.
  10. Bake for 12-15 minutes until tortillas are golden brown and crispy and cheese is melted.
  11. While baking, warm 1 cup of au jus mix or beef broth in a small saucepan over medium heat until simmering.
  12. Remove roll ups from oven and let cool for 1-2 minutes. Serve warm with hot au jus for dipping.

Notes

For extra crispy edges, broil for 1-2 minutes at the end but watch closely to avoid burning. Pat roast beef dry if too juicy to prevent soggy tortillas. Avoid overfilling to keep roll ups intact. Reheat leftovers in oven at 350°F for 10 minutes to maintain crispiness. Can be pan-fried as an alternative cooking method.
