  • Pinch of dried thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 1 pound (450 g) of carrots into evenly sized sticks or rounds, about ½ inch thick.
  3. In a mixing bowl, combine 2 tablespoons (30 ml) olive oil, 3 minced garlic cloves, ½ teaspoon (3 g) salt, and ¼ teaspoon (1 g) freshly cracked black pepper. Add a pinch of dried herbs if using.
  4. Add the cut carrots to the bowl and toss until each piece is well coated.
  5. Spread the carrots out in a single layer on a rimmed baking sheet, leaving space between pieces.
  6. Roast for 20-25 minutes, flipping the carrots halfway through (about 12 minutes) to promote even browning.
  7. Check for doneness: carrots should be tender with crispy, caramelized edges. Roast longer in 3-5 minute increments if needed.
  8. Serve warm, optionally garnished with fresh parsley or a squeeze of lemon juice.

Notes
