  • 1/2 cup (100 g) granulated sugar
  • 2 large egg whites, room temperature
  • 3 tablespoons (43 g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sesame oil (optional but recommended)
  • Pinch of salt
  • 1 tablespoon water
  • Fortune strips, pre-written or DIY

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a medium bowl, whisk together sifted all-purpose flour, granulated sugar, and a pinch of salt. In a separate bowl, beat egg whites until slightly frothy but not stiff (about 1-2 minutes).
  3. Slowly add the egg whites to the dry mixture, stirring gently. Then, mix in melted and cooled unsalted butter, vanilla extract, sesame oil, and water. Stir until you get a smooth, slightly runny batter.
  4. Drop about 1 tablespoon of batter per cookie onto the baking sheet, spacing them about 3 inches apart. Use the back of a spoon or offset spatula to spread each into a thin 3-inch circle.
  5. Bake for 7-8 minutes until edges turn golden brown and centers stay pale. Remove tray promptly.
  6. Working quickly, use a spatula to lift one cookie at a time. Place a fortune strip in the center, fold the cookie in half, then gently bend the folded edge over the rim of a cup or bowl to create the classic fortune cookie shape. Set them in a muffin tin to cool and hold their shape.
  7. Let the fortune cookies cool completely for 15-20 minutes before serving.

Notes

Use gluten-free flour blend to make gluten-free cookies. Replace butter with coconut oil for dairy-free. Work quickly when shaping cookies as they harden fast. If cookies harden before folding, reheat in oven for 10-15 seconds to soften.
