These crispy keto bacon jalapeño poppers are a quick, easy, and flavorful low-carb snack featuring spicy jalapeños filled with a creamy cheese blend and wrapped in crispy bacon.

Ingredients

Scale
  • Fresh jalapeños, medium-sized, firm, and crisp
  • 8 oz (225g) full-fat cream cheese, softened
  • 1 cup (100g) shredded sharp cheddar cheese
  • Bacon slices, thick-cut
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste
  • Optional toppings: chopped fresh cilantro or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it 10-15 minutes to reach temperature.
  2. Wearing gloves, slice each jalapeño lengthwise in half. Remove seeds and ribs if you prefer less heat. Rinse and pat dry thoroughly.
  3. In a mixing bowl, combine softened cream cheese and shredded sharp cheddar. Stir in garlic powder, onion powder, salt, and pepper to taste until smooth and creamy.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Cut bacon slices in half if needed to fit around the jalapeños. Wrap each popper snugly with one bacon half, securing with a toothpick if necessary.
  6. Place poppers seam-side down on a parchment-lined baking sheet.
  7. Bake for 20-25 minutes, turning the pan halfway through to ensure even cooking, until bacon is crispy and filling is bubbly.
  8. Let the poppers cool on the tray for 5 minutes before serving.

Notes

If bacon isn’t crisping enough, broil for the last 1-2 minutes watching carefully to avoid burning. Drain on paper towels before serving to reduce greasiness. Wear gloves when prepping jalapeños to avoid irritation. Pat jalapeños dry thoroughly to prevent soggy poppers. Thick-cut bacon crisps better and holds shape well. Turn pan halfway through baking for even cooking.
