A quick and easy snack featuring crispy tater tots layered with melty cheese, seasoned meat, beans, and fresh toppings for a comforting and indulgent treat.

  • 1 (32 oz / 900 g) bag frozen tater tots, preferably crispy style
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese
  • 1/2 pound (225 g) cooked ground beef or turkey, seasoned with taco spices (optional)
  • 1 cup (165 g) black beans, drained and rinsed
  • 2 tablespoons sliced jalapeños (fresh or pickled)
  • 2 stalks green onions, thinly sliced
  • 1 medium tomato, diced
  • 1/2 cup (120 ml) sour cream
  • A handful fresh cilantro, chopped (optional)
  • Seasoning blend: 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots evenly on a rimmed baking sheet, avoiding crowding. Bake for 25-30 minutes, flipping halfway through for even browning.
  3. While the tots bake, cook the ground beef or turkey in a medium skillet over medium heat until browned, breaking it apart with a spatula. Drain excess fat if needed.
  4. Add the seasoning blend (chili powder, cumin, smoked paprika, garlic powder, salt, and pepper) to the meat. Stir and cook for another 2-3 minutes until fragrant. Set aside.
  5. Once tots are golden and crispy, remove from oven. Sprinkle half the shredded cheese evenly over the tots, then layer on the cooked meat (if using) and black beans.
  6. Add the remaining cheese on top. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from oven and scatter diced tomatoes, sliced jalapeños, and green onions over the top. Finish with dollops of sour cream and a sprinkle of fresh cilantro.
  8. Serve immediately while cheese is gooey and tots are crunchy.

Notes

Use vegan cheese and skip meat for a vegetarian version. Swap black beans for pinto or kidney beans. For dairy-free, try coconut yogurt instead of sour cream. To get extra crispy tots, bake at 425°F and flip halfway through. Layer cheese twice to lock in moisture. Reheat leftovers in oven or air fryer to maintain crispiness; avoid microwaving.
