Instructions

  1. Bring a large pot of salted water to a boil. Add gnocchi and cook according to package instructions (usually 2-3 minutes) until they float to the surface. Use a slotted spoon to transfer gnocchi to a colander and drain well. Let them sit a minute to dry.
  2. Heat 1 tablespoon unsalted butter and 1 tablespoon olive oil in a large non-stick skillet over medium heat. Add gnocchi in a single layer and cook for 3-4 minutes without stirring to crisp the bottoms. Flip and cook another 3-4 minutes until all sides are golden and crunchy. Season with salt and pepper. Remove gnocchi from pan and set aside.
  3. In a medium saucepan, melt 1 tablespoon butter over medium heat. Add minced garlic and sauté 1-2 minutes until fragrant but not browned. Pour in heavy cream and stir in Dijon mustard. Bring to a gentle simmer, then add grated Parmesan. Stir constantly until cheese melts and sauce thickens slightly, about 3-4 minutes. Season with salt and pepper.
  4. Add crispy gnocchi to the sauce and toss gently to coat evenly. Let warm together for 1-2 minutes. Remove from heat, garnish with fresh thyme or parsley, and serve immediately.

Dry gnocchi well after boiling to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Use butter and olive oil together for best golden crust.
