Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 3/4 cup granulated sugar and 3/4 cup packed brown sugar until fluffy and pale, about 3-4 minutes, scraping down the sides occasionally.
  3. Beat in 2 large room temperature eggs, one at a time, then stir in 1 teaspoon vanilla extract and 1/2 teaspoon mint extract.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding in with a wooden spoon until just combined.
  6. Gently stir in 1 1/2 cups semi-sweet chocolate chips and optional crushed candy canes or white chocolate chips if using.
  7. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden and crisp but centers remain soft, rotating pans halfway through baking.
