Crispy One-Pan Maple Dijon Chicken Thighs with Roasted Apples

A comforting and flavorful one-pan chicken dish featuring crispy skin, a sweet and tangy maple Dijon glaze, and tender roasted apples. Perfect for cozy dinners and easy weeknight meals.

  • 6 bone-in, skin-on chicken thighs (about 2 to 2.5 lbs / 9001100 g)
  • 1/4 cup (60 ml) pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 medium apples (firm variety like Honeycrisp or Granny Smith), sliced into 1/2 inch wedges
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup (120 ml) low-sodium chicken broth
  • Optional: dash of smoked paprika or cayenne pepper

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt and pepper on all sides. Core and slice the apples into 1/2 inch wedges. Mince the garlic and remove thyme leaves from stems.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, thyme leaves, and smoked paprika if using. Set aside.
  3. Preheat oven to 400°F (200°C). Heat olive oil in an oven-safe 12-inch skillet over medium-high heat until shimmering but not smoking.
  4. Place chicken thighs skin side down in the hot skillet. Press lightly with tongs to ensure even contact. Cook without moving for 6-7 minutes until skin is golden brown and crisp. Flip and cook the other side for 2 minutes.
  5. Nestle apple wedges around the chicken in the skillet. Pour the maple Dijon sauce evenly over the chicken and apples. Pour chicken broth around the edges of the pan.
  6. Transfer skillet to the oven and roast for about 20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and apples are tender but not mushy.
  7. Remove skillet from oven and let chicken rest for 5 minutes in the pan. Spoon pan juices over the top before serving.
  8. Optional: If skin loses crispiness in the oven, broil for 1-2 minutes watching closely to avoid burning.

Notes

Pat chicken skin dry before searing for best crispiness. Avoid overcrowding the pan to ensure even cooking. Use firm apple varieties to hold shape during roasting. For extra crispiness, finish with a quick broil. Can substitute pears or peaches for apples. Use gluten-free broth and mustard for gluten-free version.
