  • 2 eggs, lightly beaten
  • 1 cup panko breadcrumbs

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Peel the onions and slice them into thin rings (about 1/8 inch thick). Separate the rings carefully.
  3. Set up your breading station: Place the flour in one bowl, the beaten eggs in another, and the mixture of panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a third bowl.
  4. Dip each onion ring into the flour, shaking off any excess. Then, dip it into the egg mixture, followed by the breadcrumb and Parmesan mixture. Ensure the coating sticks evenly.
  5. Lay the coated onion rings onto your prepared baking sheet in a single layer, ensuring they don’t overlap.
  6. Lightly spray the onion rings with cooking spray or drizzle a bit of oil over the top for extra crispiness.
  7. Bake for 12-15 minutes, flipping halfway through, until the onion rings are golden brown and crispy.
  8. Remove from the oven and let them cool slightly before serving. Enjoy warm for the best crunch!

Notes

Ensure onion slices are dry before coating to help the breading stick better. Use fresh Parmesan for better flavor and texture. For extra crispiness, sprinkle additional Parmesan during the last few minutes of baking.
