Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin or line with paper liners.
  2. In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the egg and vanilla extract until well combined and the dough looks glossy and smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Avoid overmixing.
  6. Gently fold in the Cracker Jack popcorn, trying not to crush it too much.
