Crispy Zucchini Casserole with Cheddar and Ritz Cracker Crust

A quick and easy zucchini casserole featuring a crunchy Ritz cracker crust and a creamy, cheesy zucchini base, perfect for satisfying weeknight dinners.

  • 4 medium zucchinis, grated
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups crushed Ritz crackers (about 30 crackers)
  • 4 tablespoons unsalted butter, melted
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/2 cup sour cream
  • 1/4 cup whole or 2% milk
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning or dried basil (optional)

Instructions

  1. Wash and grate 4 medium zucchinis. Place grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible (about 5 minutes).
  2. In a small skillet, heat 1 tablespoon olive oil over medium heat. Add finely chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds. Remove from heat and set aside.
  3. In a large bowl, combine the drained zucchini, sautéed onion and garlic, shredded cheddar, beaten eggs, sour cream, milk, Italian seasoning, salt, and pepper. Stir well until evenly mixed and creamy.
  4. Crush about 30 Ritz crackers finely but not to powder. Mix crushed crackers with melted butter and grated Parmesan cheese (if using) to form the crust mixture.
  5. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  6. Spread the zucchini mixture evenly in the baking dish. Sprinkle the Ritz cracker crust mixture evenly over the top, pressing lightly to adhere.
  7. Bake for 35-40 minutes, or until the top is golden brown and crisp and the filling is bubbling around the edges. Tent loosely with foil if crust browns too fast.
  8. Let the casserole cool for 5-10 minutes before slicing and serving.

Notes

Squeeze out zucchini moisture thoroughly to avoid a watery casserole. Crush Ritz crackers coarsely for a crunchy crust. Sauté onion and garlic for added flavor but can be skipped. Tent casserole with foil if crust browns too quickly. Let casserole rest before serving for better texture.
