  • 1/4 cup (56 grams) butter, melted
  • 1/4 cup (50 grams) brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup green and gold sprinkles (optional but recommended)
  • Pinch of coarse sea salt

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Pop the popcorn kernels using an air popper or stovetop with a bit of oil to yield about 8 cups of fluffy popcorn. Remove any unpopped kernels.
  3. In a large mixing bowl, combine the popcorn, Chex cereal, mini pretzels, and roasted nuts. Toss gently to mix without crushing the popcorn.
  4. In a medium saucepan over low heat, melt the butter. Stir in the brown sugar, ground cinnamon, vanilla extract, and a pinch of coarse sea salt.
  5. Cook the butter mixture for 2-3 minutes, stirring frequently, until the sugar dissolves and the glaze is smooth with a caramel aroma.
  6. Pour the warm glaze evenly over the snack mix. Toss gently with a spatula or wooden spoon to coat the mix without making it soggy.
  7. Spread the coated snack mix evenly on a baking sheet lined with parchment paper or a silicone baking mat.
  8. Bake for 45 minutes, stirring every 15 minutes to prevent clumping and ensure even crunch.
  9. Remove from oven and immediately sprinkle the green and gold sprinkles over the warm mix. Toss gently to distribute.
  10. Let the snack mix cool completely on the baking sheet. Break apart any clusters and transfer to an airtight container.
