  • 4 oz (115 g) bittersweet or dark chocolate, chopped and melted
  • 12 pieces (approx. 6 oz / 170 g) soft caramel candies, chopped
  • 2 tablespoons (30 ml) heavy cream
  • Pinch of sea salt flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a microwave-safe bowl, combine melted butter and chopped bittersweet chocolate. Microwave in 20-second bursts, stirring until smooth and glossy. Let cool slightly.
  3. In a large bowl, whisk granulated sugar, brown sugar, and eggs until thick and pale, about 2-3 minutes. Add vanilla extract and mix until combined.
  4. Slowly pour the melted butter and chocolate mixture into the sugar and egg mixture. Stir gently until fully combined and smooth.
  5. Sift together all-purpose flour, cocoa powder, and salt. Gently fold into the wet ingredients using a rubber spatula, being careful not to overmix.
  6. In a small microwave-safe bowl, combine chopped caramel candies and heavy cream. Microwave in 15-second intervals, stirring until smooth and pourable. Add sea salt flakes if desired.
  7. Pour half of the brownie batter into the prepared pan and spread evenly. Spoon half the caramel over the batter in dollops.
  8. Top with the remaining batter and then the rest of the caramel. Use a butter knife or skewer to swirl the caramel gently into the batter, creating ribbons.
  9. Bake for 30-35 minutes. Test doneness by inserting a toothpick; it should come out with moist crumbs, not wet batter.
  10. Cool completely in the pan on a wire rack before lifting out with parchment paper. Chill for an hour if desired for cleaner slicing.
