Decadent Honey Bun Cheesecake

A sweet, comforting cheesecake combining soft, spiced honey bun chunks with rich, silky cheesecake filling. Perfect for gatherings and easy to make with simple ingredients.

  • 3 medium-sized honey buns, torn into chunks
  • Unsalted butter, melted (for crust and greasing)
  • 1/4 cup granulated sugar (for crust)
  • 24 oz (680 g) cream cheese, softened
  • 3/4 cup granulated sugar (for filling)
  • 3 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup (240 ml) sour cream
  • 2 tbsp all-purpose flour (optional)
  • 1 tsp cinnamon
  • For the glaze (optional):
  • 1 cup powdered sugar
  • 12 tbsp milk (dairy or plant-based)
  • 1 tbsp honey

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan with melted butter and line the bottom with parchment paper.
  2. Prepare the honey bun crust: Tear 1.5 honey buns into small chunks. Toss with 2 tbsp melted butter and 1/4 cup granulated sugar until evenly coated. Press firmly into the bottom of the pan.
  3. Make the cheesecake batter: Beat 24 oz softened cream cheese with 3/4 cup sugar on medium speed until smooth. Add eggs one at a time, beating well after each. Stir in sour cream, vanilla extract, flour, and cinnamon. Beat just until combined.
  4. Fold in the remaining 1.5 honey buns torn into bite-sized pieces gently with a spatula.
  5. Pour batter over the crust and smooth the top gently.
  6. Bake for 55-65 minutes until edges are set and center slightly jiggles when shaken.
  7. Turn off oven, crack door open, and let cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
  8. Optional: Prepare glaze by whisking powdered sugar, milk, and honey until smooth. Drizzle over chilled cheesecake before serving.

Notes

Use room temperature ingredients to avoid lumps and cracks. Do not overmix the batter. Cooling the cheesecake gradually with the oven door cracked prevents cracks. Folding in honey bun chunks gently preserves soft pockets of cinnamon-sweetness. Optional water bath can reduce cracking but is not necessary.
