  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup mini peanut butter cups

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, whisking until fully incorporated.
  4. In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined.
  6. Gently fold in the mini peanut butter cups, reserving a handful to sprinkle on top.
  7. Spread the batter evenly into the prepared pan. Scatter the remaining peanut butter cups on top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  9. Let the brownies cool in the pan for at least 15 minutes. Use the parchment paper to lift them out and transfer to a wire rack to cool completely.
  10. Slice into squares and serve.

Notes

For extra gooey brownies, bake for 30 minutes instead of 35. Use room temperature eggs for smoother batter and even baking. Always line your baking pan with parchment paper for easy cleanup.
