  • 2 tablespoons aged balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon ground cinnamon (optional)
  • 4 generous scoops vanilla ice cream
  • Fresh mint or basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and dry the peaches. Cut them in half and remove the pits. Quarter if peaches are large.
  3. In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, and ground cinnamon until well blended.
  4. Add the peach halves to the bowl and gently toss to coat evenly with the balsamic glaze.
  5. Line a rimmed baking sheet with parchment paper. Place peaches cut-side up in a single layer, spaced slightly apart.
  6. Roast peaches in the oven for 20-25 minutes until tender and caramelized at the edges.
  7. Check for doneness; the skin should wrinkle and flesh be soft but not mushy. Roast up to 5 more minutes if needed.
  8. Transfer peaches to serving bowls or plates. Add a scoop or two of vanilla ice cream on top or alongside each portion.
  9. Garnish with fresh mint or basil leaves if desired and serve warm.

Use firm but ripe peaches to avoid mushy texture. Measure balsamic vinegar carefully to balance sweetness. Honey helps caramelization but can be swapped with maple syrup for a vegan option. Watch roasting time closely to prevent burning. Serve immediately for best contrast between warm peaches and cold ice cream. Leftovers can be refrigerated for up to 2 days and reheated gently.
