  • 1 cup (150g) fresh strawberries, ripe and sweet
  • 2 tablespoons granulated sugar
  • 1 cup (240ml) heavy whipping cream, chilled
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Rinse and hull about 1 cup (150g) of fresh strawberries. Roughly chop them to make blending easier.
  2. Place the chopped strawberries in a blender or food processor along with 2 tablespoons of granulated sugar, 1 teaspoon vanilla extract, and 1 tablespoon fresh lemon juice. Blend until smooth but still slightly textured.
  3. Pour 1 cup (240ml) of heavy whipping cream into a cold mixing bowl. For best results, chill the bowl and beaters in the fridge for 10-15 minutes beforehand (optional).
  4. Using an electric mixer or a whisk, beat the cream until soft peaks form. Do not overbeat.
  5. Gently fold about half of the whipped cream into the strawberry puree to lighten it. Then fold in the remaining whipped cream carefully to keep the mousse fluffy and airy.
  6. Spoon the mixture into serving glasses or bowls and refrigerate for at least 1 hour to let it set and the flavors meld.
  7. Garnish with a fresh strawberry slice or a sprig of mint if desired, then serve chilled.

Notes

Chill your bowl and beaters before whipping cream for best results. Do not overwhip the cream to avoid turning it into butter. Fold whipped cream gently to keep mousse airy. If using frozen strawberries, thaw and drain excess juice before blending. For dairy-free version, substitute heavy cream with chilled coconut cream.
