  • 1 tablespoon lemon juice (optional)
  • 1 teaspoon cinnamon
  • 1/3 cup creamy peanut butter
  • 2 tablespoons coconut oil
  • 12 tablespoons maple syrup or honey
  • Pinch of sea salt
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons crushed peanuts
  • 1 tablespoon shredded coconut (unsweetened)
  • 1 tablespoon granola
  • Drizzle of melted dark chocolate (optional)

Instructions

  1. Wash and dry apples. If using lemon juice, mix with 1 tablespoon water. Slice apples into thin rounds (about 1/4 inch thick), removing seeds and core. Arrange slices in a single layer on a serving platter, slightly overlapping. Dust lightly with cinnamon.
  2. In a small saucepan over low heat, combine peanut butter, coconut oil, maple syrup, and a pinch of sea salt. Stir constantly with a whisk or fork until smooth and pourable, about 2-3 minutes. Alternatively, microwave in 20-second intervals, stirring between each, until smooth.
  3. Drizzle warm peanut butter sauce over apple slices in a back-and-forth motion for even coverage. Let cool for about 1 minute before adding toppings.
  4. Sprinkle mini chocolate chips, crushed peanuts, shredded coconut, and granola evenly over the apples. If desired, drizzle melted dark chocolate on top.
  5. Serve immediately while apples are crisp and sauce is warm.

Notes

For best results, slice apples just before serving to prevent browning. If using cold peanut butter, let it come to room temperature before making the sauce. The sauce can be made ahead and stored in the fridge for up to a week; reheat gently. For a nut-free version, use sunflower seed butter and omit crushed peanuts.
