  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can refried beans
  • 1 cup salsa
  • 68 flour tortillas
  • 2 cups shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
  • 1 cup sour cream
  • Optional toppings: diced tomatoes, sliced black olives, green onions, jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 6-8 minutes. Drain any excess grease.
  3. Add the taco seasoning to the beef, along with 1/4 cup of water. Stir until the seasoning is evenly distributed. Let it simmer for 2 minutes. Set aside.
  4. Spread a thin layer of salsa at the bottom of your baking dish to prevent sticking.
  5. Place a tortilla in the dish, spreading a layer of refried beans over it. Add a layer of the seasoned beef, followed by a sprinkle of shredded cheese.
  6. Repeat the layering process—tortilla, beans, beef, cheese—until you’ve used up the ingredients. Finish with a final layer of tortilla and a generous sprinkle of cheese on top.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbling and golden.
  8. Let the casserole cool for 5 minutes before slicing. Serve warm with your favorite toppings.
