  • 8 ounces (225g) egg noodles
  • 3 cups (720ml) beef broth
  • 1 cup (240ml) sour cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons (30g) butter
  • Salt and pepper, to taste

Instructions

  1. Heat butter in a large deep skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Cook about 8 minutes until no longer pink and browned in spots. Season with salt and pepper. Drain excess fat if needed, leaving a little for flavor.
  2. Push beef to one side of the pan. Add chopped onion and minced garlic. Sauté about 3 minutes until onions are soft and translucent.
  3. Pour in beef broth and stir to combine. Add egg noodles, ensuring they are submerged. Increase heat to bring to a gentle boil.
  4. Reduce heat to medium-low, cover with lid, and simmer about 10-12 minutes until noodles are tender. Stir occasionally to prevent sticking.
  5. Remove lid and turn off heat. Stir in sour cream gently until fully incorporated. Avoid boiling after adding sour cream to prevent curdling.
  6. Taste and adjust seasoning with salt and pepper. If sauce is too thick, add a splash of broth or water to loosen. Garnish with fresh parsley or paprika if desired and serve hot.

Notes

Do not add sour cream while the pan is still boiling to avoid curdling. Stir sour cream in off heat. Keep an eye on liquid level while cooking noodles; add broth or water as needed to prevent drying or sticking. Browning the beef properly adds flavor. Use low to medium heat for simmering noodles.
