  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard (optional)
  • 3 tablespoons all-purpose flour (or gluten-free flour)
  • 1 cup full-fat sour cream, stirred before adding (or Greek yogurt as substitute)
  • Salt and pepper to taste
  • 12 ounces wide egg noodles (or gluten-free pasta or mashed potatoes)
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Chop the onion finely and mince the garlic. Slice the mushrooms into even pieces. Cut beef into bite-sized pieces if not pre-cut.
  2. Place beef, onion, garlic, and mushrooms into the crockpot. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Sprinkle flour evenly over the top and gently stir to combine without clumping.
  3. Cover and cook on low for 7 to 8 hours or on high for about 4 hours until beef is fork-tender and mushrooms are softened.
  4. About 20 minutes before the stroganoff is done, cook egg noodles according to package instructions. Drain and set aside.
  5. Stir in sour cream gently after cooking is complete; avoid boiling after adding sour cream to prevent curdling. If sauce is too thin, mix a teaspoon of cornstarch with cold water and stir in, cooking on high for another 15 minutes until thickened.
  6. Season with salt and pepper gradually, tasting as you go.
  7. Serve beef stroganoff over warm egg noodles and garnish with fresh parsley.

Notes

Do not add egg noodles directly to the crockpot to avoid mushy texture; cook separately. Add sour cream at the end off heat or on ‘keep warm’ to prevent curdling.
