  • 3 cups (450g) shredded cooked chicken (rotisserie or poached chicken breasts)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120ml) ranch dressing (or blue cheese dressing)
  • 1 cup (100g) shredded cheddar cheese
  • 2 green onions, sliced (optional)
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Prepare the chicken: shred about 3 cups (450g) of cooked chicken, discarding skin and bones.
  2. Soften the cream cheese by microwaving for 20-30 seconds until soft but not melted.
  3. In a mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, shredded cheddar cheese, garlic powder, salt, and pepper. Mix well.
  4. Place shredded chicken into the slow cooker insert and pour the creamy buffalo mixture over it. Stir gently to combine.
  5. Cover and cook on low for 2–3 hours or on high for 1–1.5 hours, stirring halfway through cooking.
  6. Check that the dip is hot, bubbly, and creamy with melted cheese. If too thick, stir in a splash of milk or more buffalo sauce.
  7. Garnish with sliced green onions before serving. Serve warm with tortilla chips, celery sticks, or crackers.

Notes

Softening the cream cheese before mixing ensures a smooth dip without lumps. Stir halfway through cooking to prevent sticking and encourage even melting. Adjust buffalo sauce amount to control heat level. Use a slow cooker liner or grease the pot for easy cleanup. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
