  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme (or 1 tablespoon fresh)

  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 tablespoons cold unsalted butter, cubed
  • ¾ cup whole milk
  • Freshly ground black pepper to taste

Instructions

  1. Add chopped onion, carrots, celery, and minced garlic to the slow cooker. Place chicken thighs or breasts on top.
  2. Pour in 6 cups chicken broth and add dried thyme, dried parsley, salt, pepper, and 2 tablespoons unsalted butter.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and vegetables are soft.
  4. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker and stir gently.
  5. In a medium bowl, whisk together flour, baking powder, and salt. Cut in cold cubed butter until mixture resembles coarse crumbs.
  6. Stir in whole milk until just combined; do not overmix.
  7. Stir 1 cup heavy cream into the slow cooker broth.
  8. Drop spoonfuls (about 2 tablespoons each) of dumpling dough gently over the surface of the hot soup.
  9. Cover and cook on high for 45 minutes to 1 hour without lifting the lid.
  10. Check dumplings for doneness; they should be puffed, cooked through, and fluffy.
  11. Adjust salt and pepper to taste before serving.

Notes

Do not lift the slow cooker lid while dumplings cook to keep steam inside and ensure fluffy dumplings. Use cold butter in dumpling dough for light texture. Fresh baking powder is essential for proper rise. For dairy-free, substitute cream and milk with coconut or almond milk. Dumplings can be made gluten-free with appropriate flour blends. Leftovers keep well refrigerated for 3-4 days; reheat gently on stove with added broth to loosen. Freeze soup base and dumplings separately for best texture.
