  • 8 slices sandwich bread (white or whole wheat, thinly sliced)
  • 8 slices thick-cut bacon
  • Shredded romaine or iceberg lettuce
  • Thin slices of Roma tomato
  • 8 ounces softened cream cheese
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon minced fresh chives
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: splash of lemon juice
  • Optional: pinch of smoked paprika

Instructions

  1. Cook 8 slices of thick-cut bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and let cool. Alternatively, cook bacon in the oven at 400°F for 15-20 minutes on a foil-lined sheet.
  2. In a medium bowl, combine 8 ounces softened cream cheese, 2 tablespoons finely chopped fresh parsley, 1 tablespoon minced chives, 1/4 teaspoon garlic powder, and salt and pepper to taste. Mix until smooth and well combined. Optionally, add a splash of lemon juice or a pinch of smoked paprika.
  3. Lay out 8 slices of sandwich bread on a flat surface. Optionally trim off crusts. Spread about 2 tablespoons of the herb cream cheese mixture evenly on each slice.
  4. On top of the cream cheese, evenly distribute 1 slice of crispy bacon (break into smaller pieces if needed), a few thin slices of Roma tomato, and a handful of shredded lettuce. Keep fillings closer to one edge for easier rolling.
  5. Starting from the edge with the fillings, carefully roll each slice tightly into a log. Use a sharp knife to slice each roll into 1-inch pinwheels.
  6. Place the pinwheels cut side up on a parchment-lined baking sheet. Bake at 375°F for 12-15 minutes or until edges are golden brown and crispy. Check at 12 minutes to avoid burning.
  7. Remove from oven and let cool for 5 minutes before serving.

Notes

Use softened cream cheese for easier spreading and to prevent bread tearing. Avoid overfilling with tomato and lettuce to keep bread from getting soggy. Let pinwheels cool slightly before serving to hold together better. For gluten-free, use gluten-free bread; for dairy-free, substitute cream cheese with a dairy-free brand. Spritz bread with water before rolling if dry. Slice with serrated knife for cleaner edges.
