  • 4 bone-in, skin-on chicken thighs
  • 1.5 to 2 pounds Yukon Gold or baby red potatoes
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 4 tablespoons extra virgin olive oil, divided
  • 2 teaspoons dried oregano, divided
  • Salt, to taste
  • Black pepper, to taste
  • Optional: splash of white wine or chicken broth
  • Optional: small-curd feta cheese, crumbled for garnish
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and halve baby potatoes or cut Yukon Gold potatoes into 1- to 1.5-inch chunks.
  3. In a large bowl, toss potatoes with 2 tablespoons olive oil, half the minced garlic, salt, pepper, and 1 teaspoon dried oregano until evenly coated.
  4. Spread potatoes in a single layer on one side of a large rimmed baking sheet.
  5. In the same bowl, add chicken thighs. Drizzle with 2 tablespoons olive oil, lemon juice and zest, remaining garlic, 1 teaspoon dried oregano, salt, and pepper. Toss to coat each piece well.
  6. Nestle chicken thighs skin-side up on the other half of the baking sheet, ensuring pieces do not touch.
  7. Roast in the oven for 35-40 minutes. At about 20 minutes, turn potatoes with tongs for even browning and baste chicken with pan juices.
  8. Check that chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and tender.
  9. Optional: sprinkle chopped parsley or crumbled feta over the top before serving.
  10. Serve warm with lemon wedges on the side.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Roast at high heat (425°F) for best browning. If skin isn’t crisp enough, broil for 1-2 minutes watching carefully. Let chicken rest 5-10 minutes after roasting. Optional splash of white wine or chicken broth adds moisture and flavor. Feta cheese garnish is optional and can be omitted for dairy-free diet.
