  • 1/2 cup (50g) protein powder (whey, plant-based, or collagen; vanilla-flavored recommended)
  • 1/2 cup (120g) nut butter (creamy almond or peanut butter, natural and unsweetened)
  • 1/4 cup (60ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional mix-ins: chopped nuts, chia seeds, or flaxseeds

Instructions

  1. Preheat oven to 350°F (175°C). Spread shredded coconut evenly on a baking sheet and toast for about 5 minutes until golden and fragrant, watching closely to avoid burning (optional).
  2. In a mixing bowl, combine nut butter, honey or maple syrup, and vanilla extract. Stir well until smooth and slightly runny, about 2-3 minutes.
  3. Add protein powder, toasted coconut, sea salt, and dark chocolate chips to the wet mixture. Stir gently but thoroughly until evenly combined. The mixture should be sticky but hold together when pressed.
  4. Using a tablespoon or small cookie scoop, portion out the mixture and roll into bite-sized balls. If too sticky, dampen hands slightly with water to ease rolling.
  5. Place shaped bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes or until firm. Alternatively, freeze for about 15 minutes for quicker setting.
  6. Transfer firm bites to an airtight container. Store in the fridge for up to one week or freeze for up to one month.

Notes

Toasting the coconut is optional but recommended for added flavor and crunch. If the mixture is too dry, add a tablespoon of unsweetened almond or coconut milk to improve chewiness.
