  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and dry the potatoes. Cut into 1-inch chunks, keeping sizes uniform.
  3. In a large bowl, toss potatoes with olive oil, minced garlic, rosemary, smoked paprika, salt, black pepper, and onion powder until well coated.
  4. Spread potatoes in a single layer on a large rimmed baking sheet, avoiding overcrowding.
  5. Roast for 25 minutes, then flip potatoes using a spatula or tongs.
  6. Roast for another 15-20 minutes until golden and crispy on the outside and tender inside.
  7. Check for doneness; if needed, roast an additional 5-10 minutes for extra crispiness.
  8. Transfer to a serving dish and sprinkle with fresh parsley. Serve immediately.
