A quick and easy sheet pan dinner featuring tender, flaky salmon fillets roasted with fresh vegetables and a rich garlic butter sauce. Perfect for busy weeknights with minimal cleanup.

  • 4 salmon fillets (6 oz / 170 g each), skin on or off as preferred
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 pint cherry tomatoes, halved
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, sliced into strips
  • 1 small red onion, sliced thin
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss cherry tomatoes, zucchini slices, bell pepper strips, and red onion with olive oil, salt, pepper, and dried Italian herbs.
  3. Spread the vegetables evenly on a parchment-lined rimmed baking sheet, leaving space in the center for the salmon.
  4. In a small bowl, combine melted butter, minced garlic, lemon juice, smoked paprika (if using), salt, and pepper. Stir well.
  5. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
  6. Place salmon fillets skin-side down in the center of the sheet pan atop or in cleared space among the veggies.
  7. Roast in the oven for 8-10 minutes.
  8. Remove the sheet pan and drizzle half of the garlic butter mixture evenly over the salmon and vegetables.
  9. Return to the oven and roast for another 7-8 minutes or until salmon flakes easily and vegetables are tender but not mushy.
  10. Sprinkle chopped fresh parsley on top and optionally add a squeeze of lemon juice before serving.

Notes

Do not overcrowd the pan to avoid soggy vegetables. Let salmon sit at room temperature for 15 minutes before cooking for even cooking. Add garlic butter halfway through baking to keep salmon moist and prevent burnt garlic. Adjust baking time for thicker fillets by adding a few extra minutes. Use fresh garlic for best flavor. Line baking sheet with parchment for easy cleanup and to prevent sticking.
