Instructions

  1. Peel, pit, and slice about 6 cups of fresh peaches. Toss them with 1/2 cup granulated sugar, 2 tablespoons lemon juice, and 2 tablespoons cornstarch in a bowl. Let sit while preparing the batter.
  2. Preheat the oven to 375°F (190°C). Place a 10-inch cast iron skillet in the oven to heat.
  3. In a large bowl, whisk together 1 cup gluten-free all-purpose flour, 1/2 cup almond flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
  4. Add 1 cup granulated sugar and 1/4 cup brown sugar to the dry mix and stir to combine.
