  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar

  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 2 cups cooked rice
  • 2 stalks green onions, thinly sliced
  • Sesame seeds, toasted
  • Salt and pepper to taste

Instructions

  1. Cook the rice: Prepare 2 cups of rice according to package instructions. Set aside and keep warm.
  2. Make the teriyaki sauce: In a medium saucepan, combine soy sauce, honey, sesame oil, rice vinegar, minced garlic, and grated ginger. Cook over medium heat until slightly thickened (about 5 minutes), stirring frequently. Remove from heat.
  3. Cook the ground turkey: Heat a large skillet over medium-high heat. Add a drizzle of sesame oil and cook the ground turkey until fully browned and cooked through, breaking it into crumbles with a spatula (approximately 6-8 minutes). Season with salt and pepper.
  4. Add the vegetables: Toss the broccoli, bell peppers, and carrots into the skillet with the turkey. Stir-fry for 4-5 minutes until the veggies are tender-crisp.
  5. Combine with sauce: Pour the teriyaki sauce over the turkey and veggie mixture. Stir well to coat everything evenly. Let it simmer for 2-3 minutes.
  6. Assemble the bowls: Divide the cooked rice into bowls, top with the turkey and veggie mixture, and garnish with green onions and sesame seeds.
