Easy Hearty Hobo Casserole Ground Beef Recipe Perfect for Family Dinners

A comforting and easy-to-make casserole featuring seasoned ground beef, tender potatoes, and melted cheddar cheese, perfect for family dinners and busy weeknights.

  • 1 pound (450 g) ground beef (80/20 preferred)
  • 4 medium potatoes (about 600 g), peeled and thinly sliced (Yukon Gold recommended)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 cup (240 ml) tomato sauce
  • 1/2 cup (120 ml) beef broth
  • 1 cup (100 g) shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika (optional but recommended)
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice 4 medium potatoes into about 1/8-inch (3 mm) thick rounds. Set aside in a bowl with cold water to prevent browning.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart with a spatula, until no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  4. Add 1 medium chopped onion, 1 diced green bell pepper, and 3 minced garlic cloves to the browned beef. Cook until the veggies soften, about 4-5 minutes, stirring often.
  5. Stir in 1 teaspoon smoked paprika, 1/2 teaspoon dried thyme, 1 tablespoon Worcestershire sauce, salt, and pepper to taste. Mix well.
  6. Pour in 1 cup tomato sauce and 1/2 cup beef broth. Stir and let simmer for 3 minutes to thicken slightly.
  7. Lightly grease a 9×13 inch casserole dish. Layer half of the sliced potatoes on the bottom, slightly overlapping.
  8. Spread half of the beef and vegetable mixture over the potatoes.
  9. Repeat the layers once more, finishing with the beef mixture on top.
  10. Sprinkle 1 cup shredded cheddar cheese evenly over the top layer.
  11. Cover the casserole dish tightly with foil and bake for 35 minutes.
  12. Remove the foil and bake for an additional 15 minutes, or until cheese is bubbly and golden and potatoes are tender.
  13. Let the casserole rest for 5-10 minutes before serving.

Notes

If potatoes aren’t cooking through, slice thinner or parboil for 5 minutes before layering. Cover while baking to keep moisture in. Use foil tenting if cheese browns too quickly. Can assemble ahead and refrigerate overnight; add extra baking time if baking cold.
