A simple, fresh snack featuring creamy hummus and crisp veggies rolled in a soft tortilla, perfect for quick bites or picnics without refrigeration.

Ingredients

  • Large flour tortillas (10-inch/25 cm)
  • Hummus (about ½ cup/120 ml)
  • Fresh bell peppers (1 medium, thinly sliced)
  • Cucumber (½ medium, thinly sliced)
  • Carrot (1 medium, peeled and julienned)
  • Baby spinach leaves (a handful, about 1 cup/30 g)
  • Fresh herbs (optional, like parsley or cilantro, finely chopped, 1 tbsp)
  • Salt and pepper (to taste)

Instructions

  1. Rinse and dry all fresh vegetables thoroughly. Thinly slice the bell pepper and cucumber into strips about ¼ inch (6 mm) thick. Peel and julienne the carrot into matchstick pieces roughly the same size as the other veggies. Set aside a handful of baby spinach leaves, discarding any wilted ones.
  2. Place one large flour tortilla flat on a clean surface or cutting board. Make sure it’s room temperature to avoid cracking or tearing during rolling.
  3. Using a spreading knife or small spatula, evenly spread about 2 tablespoons (30 ml) of hummus over the entire surface of the tortilla, leaving about ½ inch (1.25 cm) border around the edges to prevent spillover.
  4. Layer the sliced bell peppers, cucumbers, carrot sticks, and baby spinach leaves evenly over the hummus. Sprinkle with chopped fresh herbs if using, and lightly season with salt and pepper.
  5. Beginning at one edge, roll the tortilla tightly but gently to form a log, keeping the filling snug inside. If the tortilla resists, let it rest for a minute at room temperature.
  6. Using a serrated or sharp knife, trim the ends if desired for a clean look, then slice the roll crosswise into 1-inch (2.5 cm) thick rounds. You should get about 6-8 pinwheels per tortilla.
  7. Serve immediately or pack for later. These pinwheels hold up well at room temperature for several hours since they do not require refrigeration.

Use room-temperature tortillas to avoid cracking. Spread hummus evenly but not too thick. Roll tightly but gently to keep pinwheels intact. For best texture, consume within 4 hours at room temperature or refrigerate up to 24 hours wrapped tightly.
