Ingredients

Scale
  • Mini puff pastry sheets or pre-made croissant dough (store-bought for convenience)
  • Unsalted butter, softened
  • 8 oz softened cream cheese (Philadelphia preferred)
  • 1 cup grated sharp cheddar cheese (or blend of cheddar and mozzarella)
  • 1/4 cup finely chopped fresh herbs (parsley, thyme, rosemary)
  • 1/4 cup crumbled cooked bacon or pancetta (or smoked paprika for vegetarian option)
  • 1/2 tsp garlic powder
  • Freshly ground black pepper to taste
  • Egg wash (1 large egg beaten with a splash of water)
  • Sea salt flakes or coarse salt
  • Pomegranate seeds or dried cranberries (optional)
  • Optional extras: chopped walnuts or pecans, honey or maple syrup drizzle, freshly grated nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Roll out puff pastry sheets on a lightly floured surface. Cut into 2-inch squares. If frozen, thaw until pliable but cool.
  3. In a mixing bowl, combine softened cream cheese, grated cheddar, chopped fresh herbs, crumbled bacon, garlic powder, and black pepper. Stir until smooth. Add a teaspoon of milk if mixture is too stiff.
  4. Place a teaspoon of filling in the center of each puff pastry square. Fold corners toward the center to form bundles or leave open-faced. Press gently to seal if folded.
  5. Brush tops lightly with egg wash using a pastry brush or finger. Sprinkle with sea salt flakes.
  6. Bake for 15-18 minutes until puffed and golden brown. Watch closely to avoid burning.
  7. Remove from oven and let cool for 5 minutes. Optionally, sprinkle with pomegranate seeds or dried cranberries. Serve warm or at room temperature.

Notes

For best puff pastry results, ensure oven is fully preheated and avoid opening the door early. Chill assembled appetizers for 10 minutes before baking to help maintain shape. Use a hand mixer for smoother filling if desired. Leftovers store up to 3 days refrigerated; reheat in oven to maintain crispness. Variations include vegetarian, gluten-free, and sweet-savory versions.
