Easy Make-Ahead Freezer Breakfast Burritos

These freezer-friendly breakfast burritos are quick to prepare, packed with flavor, and perfect for busy mornings. Made with fluffy eggs, melty cheese, sausage, and sautéed veggies, they freeze well without getting soggy.

  • Large flour tortillas (burrito-sized, Mission brand preferred)
  • 8 large eggs, beaten with 2 tablespoons milk
  • 1 cup shredded cheddar or Mexican blend cheese
  • 8 ounces breakfast sausage (turkey or pork), crumbled and cooked
  • ½ cup diced bell peppers
  • ½ cup chopped onion
  • ½ cup black beans, rinsed and drained (optional)
  • ½ cup salsa (mild, medium, or hot)
  • Salt and pepper to taste
  • 1 tablespoon oil or butter (olive oil or avocado oil recommended)

Instructions

  1. Heat 1 tablespoon of oil in a large non-stick skillet over medium heat. Add breakfast sausage, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat and set aside.
  2. In the same pan, add another teaspoon of oil if needed. Add diced bell peppers and chopped onion. Cook until softened and fragrant, about 4-5 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, beat eggs with milk, salt, and pepper. Pour into skillet over medium-low heat. Gently scramble eggs by stirring slowly until just set but still moist, about 4-5 minutes. Remove from heat.
  4. Combine cooked sausage, sautéed veggies, scrambled eggs, shredded cheese, black beans (if using), and salsa in a large bowl. Stir gently to mix evenly.
  5. Lay out a large flour tortilla. Spoon about ⅓ cup of filling onto the center. Fold sides over, then roll tightly from the bottom up to form a burrito. Repeat with remaining tortillas and filling.
  6. Wrap each burrito tightly in foil or parchment paper. Place wrapped burritos in a freezer-safe bag or airtight container. Freeze for up to 3 months.
  7. To reheat, unwrap burrito and microwave on high for 2-3 minutes, flipping halfway through. For a crispier texture, heat in a 375°F (190°C) oven for 15-20 minutes.

Notes

Let the filling cool completely before assembling burritos to avoid sogginess from steam. Wrap burritos tightly to prevent freezer burn and maintain shape. Use low heat when scrambling eggs to keep them tender and moist. You can prepare filling a day ahead and refrigerate before assembling and freezing.
