Easy Make-Ahead Freezer Breakfast Burritos

These freezer breakfast burritos are a quick, flavorful, and convenient solution for busy mornings. Packed with fluffy eggs, savory sausage, melty cheese, and veggies, they can be made ahead and frozen for up to 3 months.

Ingredients

  • Large eggs, room temperature
  • ½ cup small-curd cottage cheese
  • ¼ cup milk or cream
  • Salt and pepper, to taste
  • ½ teaspoon smoked paprika
  • Breakfast sausage, cooked and crumbled
  • 1 onion, finely chopped
  • 1 cup diced bell peppers (any color, fresh or frozen)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup black beans, drained and rinsed (optional)
  • Fresh cilantro, chopped (optional)
  • 10-inch large flour tortillas
  • Aluminum foil or parchment paper for wrapping

Instructions

  1. Heat skillet over medium heat. Add crumbled breakfast sausage and cook until browned and cooked through, about 6–8 minutes. Transfer sausage to a plate lined with paper towels, leaving drippings in the pan.
  2. In the same skillet, add chopped onions and bell peppers. Cook over medium heat for 5 minutes or until softened and fragrant. Remove from heat and set aside.
  3. In a large bowl, whisk together eggs, cottage cheese, milk, salt, pepper, and smoked paprika until smooth.
  4. Wipe skillet clean or use a separate pan. Heat over medium-low heat and pour in egg mixture. Stir gently with a spatula, folding and scraping eggs as they start to set. Cook until softly scrambled but still moist, about 4–5 minutes. Remove from heat.
  5. Add cooked sausage, sautéed veggies, black beans (if using), and half of the shredded cheese to the eggs. Stir gently to combine evenly.
  6. Lay a tortilla flat on work surface. Spoon about ⅓ to ½ cup of filling onto center of tortilla. Sprinkle extra cheese on top if desired. Fold in sides and roll tightly from bottom to form burrito.
  7. Wrap each burrito tightly in aluminum foil or parchment paper. Place wrapped burritos on a baking sheet and freeze for about 2 hours until firm, then transfer to a freezer bag or container.
  8. To reheat, unwrap foil and microwave on high for 2–3 minutes, flipping halfway through. Alternatively, bake at 350°F (175°C) for about 20 minutes until heated through.

Notes

Cook eggs low and slow to keep them soft and creamy. Drain excess grease from sausage to avoid greasy burritos and freezer burn. Wrap burritos tightly and freeze flat on a baking sheet before transferring to a freezer bag to prevent freezer burn. Avoid freezing burritos with sour cream or avocado inside; add fresh when reheating. Burritos keep well up to 3 months in freezer, best eaten within 6 weeks.
