Easy Maple Dijon Glazed Salmon Recipe with Crispy Roasted Brussels Sprouts

A simple, flavorful salmon dish glazed with a sweet and tangy maple Dijon sauce, paired with crispy roasted Brussels sprouts. Perfect for a quick, comforting weeknight dinner.

  • 2 tablespoons Dijon mustard
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Salmon fillets, skin-on (about 6 ounces or 170 grams each)
  • Olive oil (for brushing and drizzling)
  • 1 pound Brussels sprouts, halved (about 450 grams)
  • Olive oil (enough to coat Brussels sprouts)

  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and trim the ends of the Brussels sprouts, then halve each sprout. Toss them in a bowl with about 2 tablespoons olive oil, salt, pepper, and red pepper flakes if using.
  3. Spread Brussels sprouts in a single layer on a parchment-lined baking sheet. Roast for 20–25 minutes, shaking or stirring halfway through, until edges are deep golden and crispy.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, fresh lemon juice, salt, and pepper. Adjust sweetness or tanginess to taste.
  5. Pat salmon fillets dry with paper towels. Brush both sides lightly with olive oil and season with salt and pepper.
  6. Place salmon skin-side down on the baking sheet with Brussels sprouts during the last 10-12 minutes of roasting. If crowded, use a separate tray for salmon.
  7. After 6 minutes, brush the maple Dijon glaze generously over the salmon. Return to oven and roast for another 4-6 minutes, until salmon flakes easily and glaze is caramelized but not burnt.
  8. Check salmon doneness: internal temperature should be 125°F–130°F (52°C–54°C) or salmon flakes easily but remains moist.
  9. Serve immediately with crispy Brussels sprouts and spoon any extra glaze over the top.

Notes

Keep an eye on the glaze while roasting to prevent burning. If dark spots appear, lower oven temperature by 10-15 degrees or tent salmon with foil. Pat salmon dry before seasoning for better glaze adhesion and crisp skin. Avoid overcrowding Brussels sprouts to ensure crispiness. Leftovers store well for up to 2 days; reheat gently in a low oven to maintain moisture and crispness.
