  • 1/2 cup (60g) panko breadcrumbs
  • 1 large egg
  • 1/4 cup (25g) finely grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for greasing muffin tin)
  • Optional: marinara sauce for dipping
  • Optional: 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in center.
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, combine ground turkey, squeezed zucchini, breadcrumbs, egg, Parmesan, garlic, oregano, salt, and pepper. Mix gently with hands until just combined.
  4. Drizzle olive oil into cups of a 12-cup standard muffin tin, coating bottom and sides.
  5. Portion meat mixture evenly into muffin cups using a 2-tablespoon cookie scoop. Press down gently.
  6. Bake for 18-20 minutes, until internal temperature reaches 165°F (74°C) and tops are lightly browned.
  7. Let rest in pan for 5 minutes, then run a small spatula around edges to loosen. Transfer to a cooling rack.
  8. Cool completely before packing or storing. For freezing, flash-freeze on rack for 20 minutes, then transfer to freezer bag.

Notes

Don’t skip squeezing the zucchini—it prevents soggy meatballs. Overmixing can make meatballs tough. Let meatballs rest in pan for 5 minutes before removing. For even cooking, fill cups evenly. Double batch and freeze half for up to 3 months.
