A light, refreshing no-bake dessert featuring layers of creamy cheesecake filling, fresh strawberries, and buttery graham crackers. Perfect for summer and requires no oven.

  • 2 sleeves (about 9 ounces or 255 grams) graham crackers
  • 2 cups fresh strawberries, sliced
  • 16 ounces (450 grams) cream cheese, softened
  • 3/4 cup (150 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (360 ml) heavy whipping cream, chilled
  • 1 tablespoon fresh lemon juice
  • Optional garnish: extra sliced strawberries or mint leaves

Instructions

  1. Rinse and slice 2 cups of fresh strawberries. Set aside about 1/2 cup for garnish.
  2. Ensure 16 ounces of cream cheese is at room temperature.
  3. In a large bowl, beat cream cheese with 3/4 cup sugar and 1 teaspoon vanilla extract until smooth and creamy (about 2-3 minutes). Add 1 tablespoon fresh lemon juice and mix briefly.
  4. In a separate chilled bowl, whip 1 1/2 cups heavy cream to soft peaks (3-5 minutes with electric mixer).
  5. Gently fold whipped cream into the cream cheese mixture using a spatula, keeping it light and airy.
  6. Spread a thin layer of cheesecake filling on the bottom of a 9×9 inch baking dish. Lay down a single layer of graham crackers (about 6-7 whole crackers, broken if needed). Add a layer of sliced strawberries (about half the amount). Repeat layering: cheesecake filling, graham crackers, strawberries, finishing with a top layer of cheesecake filling.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  8. Just before serving, top with reserved sliced strawberries and optional mint leaves.

Notes

Let the cake chill overnight for best texture and flavor. Use softened cream cheese for smooth filling. Whip cream to soft peaks and fold gently to keep mixture airy. If filling is too thick, add a splash of milk to loosen. Graham crackers soften during chilling; avoid cutting too soon to prevent crumbling. Can substitute frozen berries if thawed and drained. Dairy-free and gluten-free variations possible.
