  • 46 Italian sausage links (mild or spicy)
  • 3 medium bell peppers (red, yellow, green), sliced into thin strips
  • 1 large yellow onion, sliced thinly
  • 34 garlic cloves, minced
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • ½ teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Slice the bell peppers into thin strips and the onion into thin wedges. Mince the garlic and roughly chop parsley if using. Pat the sausages dry with a paper towel.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Let it heat until shimmering but not smoking.
  3. Add the sausages whole to the pan, spacing them out. Cook undisturbed for about 4 minutes to develop a crisp crust, then turn to brown all sides evenly using tongs. Sausages do not need to be fully cooked at this point.
  4. Remove sausages from the pan and set aside.
  5. Lower heat to medium and add the remaining tablespoon of olive oil. Add the sliced onions and peppers, stirring occasionally. Cook until softened and starting to caramelize, about 5 minutes.
  6. Stir in minced garlic, Italian seasoning, salt, pepper, and red pepper flakes if using. Cook until fragrant, about 1-2 minutes.
  7. Return sausages to the pan, nestling them among the peppers and onions. Reduce heat to medium-low, cover loosely with a lid or foil, and cook until sausages reach an internal temperature of 160°F (71°C), about 8-10 minutes.
  8. Check doneness by piercing a sausage; juices should run clear. Remove from heat, sprinkle with fresh parsley, and let rest a few minutes before serving.

Notes

Pat sausages dry before cooking to ensure crispiness. Do not overcrowd the pan to allow proper browning. Add garlic later in cooking to avoid bitterness. Cover pan loosely when cooking sausages with peppers to steam peppers tender without mushiness. Rest sausages before slicing to retain juices. For a spicy version, use hot Italian sausage and extra crushed red pepper flakes. Vegetarian and gluten-free adaptations are possible.
